Crunchy Asian Salad

Ingredients

  • 2 (3-oz) pkg ramen noodles
  • ½ cup slivered almonds
  • ¼ cup vegetable oil
  • ¼ cup balsamic vinegar
  • 2 tsp honey
  • 1 (16-oz) pkg tricolor coleslaw
  • 2 (15-oz) cans mandarin oranges, drained
  • 1 (10-oz) pkg spinach, chopped
  • 4 green onions, sliced
  • 2 avocados, chopped

Instructions

  1. Preheat oven to 400°F. Discard seasoning packets from noodles. Break noodles into large pieces, and toss with nuts on a rimmed baking sheet. Bake 6 to 8 minutes or until toasted. Cool.
  2. Whisk together oil, vinegar, and honey in a large bowl; season with salt and pepper to taste.
  3. Add slaw, oranges, spinach, onions, and noodle mixture; toss. Divide salad among 6 plates; serve with avocado.
