Crunchy Asian Salad
Ingredients
- 2 (3-oz) pkg ramen noodles
- ½ cup slivered almonds
- ¼ cup vegetable oil
- ¼ cup balsamic vinegar
- 2 tsp honey
- 1 (16-oz) pkg tricolor coleslaw
- 2 (15-oz) cans mandarin oranges, drained
- 1 (10-oz) pkg spinach, chopped
- 4 green onions, sliced
- 2 avocados, chopped
Instructions
- Preheat oven to 400°F. Discard seasoning packets from noodles. Break noodles into large pieces, and toss with nuts on a rimmed baking sheet. Bake 6 to 8 minutes or until toasted. Cool.
- Whisk together oil, vinegar, and honey in a large bowl; season with salt and pepper to taste.
- Add slaw, oranges, spinach, onions, and noodle mixture; toss. Divide salad among 6 plates; serve with avocado.
