Oven-Fried Pork Chops

Mashed Sweet Potatoes and Steamed Green Beans

Ingredients

  • 2 large eggs
  • 1 Tbsp cornstarch
  • 1 Tbsp water
  • 1½ cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 6 (1-inch-thick) boneless pork chops
  • 4 Tbsp olive oil, divided

Instructions

  1. Preheat oven to 400°F. Whisk together eggs, cornstarch, and water in a shallow bowl. Stir together panko, cheese, and Italian seasoning in a second shallow bowl.
  2. Season pork lightly with salt and pepper; dip in egg mixture. Dredge in panko mixture, pressing gently to adhere.
  3. Cook pork, in batches, in 2 Tbsp hot oil per batch until golden brown on both sides. Transfer pork to a baking sheet. Bake 10 minutes or until a meat thermometer reads 145°F.

Side Dish Ingredients

  • 2 lb sweet potatoes, peeled and cubed
  • ¼ cup butter
  • ½ tsp ground cinnamon
  • 1 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook potatoes in boiling water to cover in a large Dutch oven until tender; drain and mash to desired consistency with butter and cinnamon. Season with salt and pepper to taste.
  2. Steam green beans according to package directions.
