Oven-Fried Pork Chops
Mashed Sweet Potatoes and Steamed Green Beans
Ingredients
- 2 large eggs
- 1 Tbsp cornstarch
- 1 Tbsp water
- 1½ cups panko breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tsp Italian seasoning
- 6 (1-inch-thick) boneless pork chops
- 4 Tbsp olive oil, divided
Instructions
- Preheat oven to 400°F. Whisk together eggs, cornstarch, and water in a shallow bowl. Stir together panko, cheese, and Italian seasoning in a second shallow bowl.
- Season pork lightly with salt and pepper; dip in egg mixture. Dredge in panko mixture, pressing gently to adhere.
- Cook pork, in batches, in 2 Tbsp hot oil per batch until golden brown on both sides. Transfer pork to a baking sheet. Bake 10 minutes or until a meat thermometer reads 145°F.
Side Dish Ingredients
- 2 lb sweet potatoes, peeled and cubed
- ¼ cup butter
- ½ tsp ground cinnamon
- 1 (12-oz) pkg frozen green beans
Side Dish Instructions
- Cook potatoes in boiling water to cover in a large Dutch oven until tender; drain and mash to desired consistency with butter and cinnamon. Season with salt and pepper to taste.
- Steam green beans according to package directions.
