Bacon-Wrapped Baked Eggs

Ingredients

  • 8 slices center-cut bacon
  • 8 large eggs
  • 2 Tbsp chopped green onions
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 350°F.
  2. Coat 4 cups of a 6-count muffin pan or 4 (6- to 8-oz) ramekins with cooking spray. Line each cup or ramekin with 2 bacon slices.
  3. Crack 2 eggs in each muffin cup or ramekin. Sprinkle evenly with green onions, salt and pepper.
  4. Bake 15 to 18 minutes or until eggs are set.

  • 4 apples, sliced
  • 2 tsp fresh lemon juice
  • 2 tsp brown sugar
