Easy Beef Taco Bowls

Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • 1 lb ground sirloin
  • 1½ tsp chili powder
  • 1½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 1 head romaine lettuce, shredded
  • 1 cup refrigerated salsa
  • ½ cup light sour cream
  • ½ cup freshly shredded reduced-fat Cheddar cheese

Instructions

  1. Cook rice according to package directions.
  2. Cook ground beef, chili powder, cumin, salt and pepper in a large nonstick skillet over medium heat 8 minutes or until meat is no longer pink.
  3. Add 2 to 3 Tbsp water, if desired.
  4. Serve seasoned beef mixture over shredded lettuce in bowls with rice, salsa, sour cream and cheese.
