Balsamic-Glazed Blue Cheese Steaks

Ingredients

  • 3 (8-oz) New York strip steaks, trimmed 
  • ¾ tsp salt
  • ¾ tsp pepper
  • 3 Tbsp olive oil
  • 1 (8-oz) pkg sliced onions 
  • 3 Tbsp minced garlic
  • 1 Tbsp chopped fresh rosemary
  • ¼ cup balsamic glaze
  • ½ cup crumbled blue cheese

Instructions

  1. Sprinkle steak with salt and pepper. Cook in hot oil over medium-high heat 4 to 5 minutes per side or until browned and done; keep warm.
  2. Add onion, garlic, and rosemary to skillet; sauté 6 to 8 minutes or until onion is tender.
  3. Serve onion mixture over steak; drizzle with balsamic glaze, and sprinkle with cheese.

  • 2 lb sweet potatoes
  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 2 Tbsp chopped fresh rosemary
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 475°F. Cut potatoes lengthwise into ½-inch-thick wedges. Toss with oil, garlic, rosemary, salt, and pepper on a large rimmed baking sheet.
  2. Bake 20 to 25 minutes or until browned and tender, turning once.
