Chorizo-Black Bean Tacos

Ingredients

  • 4 oz ground chorizo sausage
  • 2 (15-oz) can black beans, drained and rinsed
  • 1 (16-oz) pkg tricolor coleslaw
  • ½ cup refrigerated cilantro-avocado yogurt dressing (such as Bolthouse Farms)
  • 12 soft taco-size corn tortillas
  • 2 avocados, sliced
  • 1 cup fresh salsa

Instructions

  1. Cook chorizo in a large skillet over medium-high heat 5 to 6 minutes or until browned and crumbly. Stir in beans; cook 2 to 3 minutes or until thoroughly heated.
  2. Meanwhile, combine slaw and dressing. Heat tortillas according to package directions.
  3. Serve bean mixture, slaw, avocados, and salsa in tortillas.
