Cilantro-Lime Shrimp Wraps
Ingredients
- 1 lb unpeeled, large raw shrimp, peeled and deveined
- 2 Tbsp olive oil, divided
- 2 Tbsp chopped fresh cilantro
- ½ tsp lime zest
- 1 Tbsp fresh lime juice
- 2 tsp ground cumin
- 4 cloves garlic, minced
- 1 heart romaine lettuce
- 1 small avocado, sliced
- 1 Roma tomato, chopped
- ¼ cup sour cream
Instructions
- Combine shrimp, 1 Tbsp oil, cilantro, lime zest, lime juice, cumin, and garlic in a large bowl. Let stand 15 minutes.
- Cook shrimp mixture in 1 Tbsp hot oil in a nonstick skillet over medium-high heat until shrimp turn pink.
- Separate lettuce leaves. Serve shrimp mixture on lettuce leaves with avocado, tomatoes, and sour cream.
