Greek Steak Lettuce Wraps

Ingredients

  • ¾ lb top sirloin steak
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tsp olive oil
  • 4 romaine lettuce leaves
  • ½ cup sliced English cucumber
  • ½ cup halved grape tomatoes
  • ¼ cup thinly sliced red onion
  • ¼ cup refrigerated tzatziki-Ranch Greek-yogurt dressing (such as Opa)
  • 3 Tbsp crumbled feta cheese

Instructions

  1. Sprinkle steak with salt and pepper. Cook in hot oil in a large cast-iron skillet over medium-high heat 5 to 6 minutes per side or to desired doneness. Remove from skillet; let stand 10 minutes before slicing across the grain.
  2. Arrange lettuce in 2 stacks; top with steak, cucumber, tomatoes, onion, dressing, and cheese.

  • ⅓ cup chopped onion
  • 1 small clove garlic, pressed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • 1½ cups cauliflower crumbles
  • 2 Tbsp low-sodium chicken broth
  • 3 Tbsp olive bruschetta topping (such as Sable and Rosenfeld)
  • 1 Tbsp chopped fresh mint

Side Dish Instructions

  1. Cook onion, garlic, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until onion is tender.
  2. Stir in cauliflower and broth; cover and cook 15 minutes or until cauliflower is tender. Remove from heat; stir in bruschetta topping and mint.
