Breakfast Mini Pizzas

Ingredients

  • ½ cup marinara sauce
  • 4 (3-oz) whole wheat pitas
  • 4 large eggs
  • 2 Tbsp 1% low-fat milk
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • ½ cup shredded part-skim mozzarella cheese
  • 2 Tbsp chopped fresh basil
  • ⅛ tsp crushed red pepper (optional)

Instructions

  1. Preheat oven to 400°F. Spread 2 Tbsp marinara sauce over each pita.
  2. Whisk together eggs, milk, salt and pepper.
  3. Cook egg mixture in hot oil in a nonstick skillet over medium heat, stirring gently with a spatula, 3 minutes or until eggs begin to set but are still very moist.
  4. Spoon egg mixture onto pitas, and sprinkle with cheese.
  5. Bake 7 to 10 minutes or until cheese is melted and eggs are completely set. Sprinkle with basil and red pepper (if using) before serving.
