Balsamic-Garlic Beef Tips
Mashed CauliflowerIngredients
- ½ lb boneless top sirloin steak, thinly sliced
- 2 Tbsp olive oil, divided
- 2 cloves garlic, minced
- 1 onion, thinly sliced
- 1 bell pepper (any color), thinly sliced
- 2 tsp almond flour (see Note)
- 2 Tbsp balsamic vinegar
- ¼ cup beef broth
Instructions
- Lightly season beef with salt and pepper. Cook in 1 Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove from pot.
- Add 1 Tbsp oil, onion, and bell pepper to pot. Cook 5 minutes or until vegetables are tender.
- Sprinkle flour over vegetables. Cook 1 minute, stirring constantly; stir in beef, vinegar, and broth. Reduce heat, and simmer 5 minutes.
Side Dish Ingredients
- 1 (20-oz) pkg frozen mashed cauliflower (such as Green Giant)
Side Dish Instructions
- Cook cauliflower according to package directions. Serve half of package; refrigerate remaining cauliflower for a future meal.
