Sheet Pan Delicata Squash and Chicken
Winter Mixed Greens SaladIngredients
- 1 lb delicata squash
- 2 Tbsp olive oil
- 1½ Tbsp minced garlic
- 1 Tbsp chopped fresh rosemary
- 1 Tbsp whole-grain mustard
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp pepper
- 1 lb boneless, skinless chicken breasts, halved lengthwise
- ¼ cup roasted, salted pepitas (pumpkin seeds)
Instructions
- Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating. Halve squash lengthwise; remove seeds, and slice squash crosswise.
- Stir together squash and all remaining ingredients except pepitas in a bowl. Arrange in an even layer on preheated baking sheet.
- Bake 20 to 25 minutes or until chicken is done and squash is browned, sprinkling pepitas over chicken and squash during last 5 minutes of baking.
Side Dish Ingredients
- 1 (5-oz) pkg mixed baby greens
- ¼ cup thinly sliced red onion
- ½ cup pomegranate seeds (arils)
- 3 Tbsp refrigerated balsamic vinaigrette
- ¼ cup crumbled goat cheese
Side Dish Instructions
- Place greens, onion, and pomegranate seeds in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
