Avocado BLT Club Sandwiches

Ingredients
- 1 ripe avocado
- 2 Tbsp light mayonnaise
- 1 tsp lemon juice
- 1 clove garlic, minced
- 8 thick slices multigrain country-style bread, toasted
- 4 oz thinly sliced cooked turkey
- 4 oz thinly sliced cooked ham
- 4 slices bacon, crisp-cooked and halved crosswise
- 4 leaves romaine lettuce
- 1 tomato, thinly sliced
Instructions
- Halve, seed, and peel avocado. In a small bowl mash one of the avocado halves; stir in mayonnaise, lemon juice, and garlic. Thinly slice remaining avocado half.
- Layer four of the bread slices with turkey, ham, avocado slices, bacon, lettuce, and tomato. Spread remaining four bread slices with mashed avocado mixture; place on sandwiches, spread sides down.
Side Dish Ingredients
- 2½ lb kohlrabi (about 6 medium), trimmed (don't peel)
- 2 Tbsp olive oil
- 1 tsp ground cumin
- ½ tsp ground coriander
- 1 tsp salt
- ⅔ cup sour cream
- ½ cup mayonnaise
- ¼ tsp ground black pepper
Side Dish Instructions
- Preheat oven to 275°F. Using a mandoline, slice kohlrabi 1/16 inch thick. In a large bowl whisk together oil, cumin, coriander, and ½ tsp salt. Add kohlrabi slices; toss to coat. Arrange slices in a single layer on two extra-large baking sheets.
- Bake 40 to 75 minutes or until chips are golden brown and crisp, rotating pans, switching rack placement, and turning chips once after 30 minutes. Start checking every 5 minutes after 30 minutes, removing chips from baking sheets as they are done. Cool on a wire rack.
- For dip, in a small bowl combine sour cream, mayonnaise, ¼ tsp. kosher salt, and black pepper. Serve with chips.
