Avocado BLT Club Sandwiches

Ingredients

  • 1 ripe avocado
  • 2 Tbsp light mayonnaise
  • 1 tsp lemon juice
  • 1 clove garlic, minced
  • 8 thick slices multigrain country-style bread, toasted
  • 4 oz thinly sliced cooked turkey
  • 4 oz thinly sliced cooked ham
  • 4 slices bacon, crisp-cooked and halved crosswise
  • 4 leaves romaine lettuce
  • 1 tomato, thinly sliced

Instructions

  1. Halve, seed, and peel avocado. In a small bowl mash one of the avocado halves; stir in mayonnaise, lemon juice, and garlic. Thinly slice remaining avocado half.
  2. Layer four of the bread slices with turkey, ham, avocado slices, bacon, lettuce, and tomato. Spread remaining four bread slices with mashed avocado mixture; place on sandwiches, spread sides down.

Side Dish Ingredients

  • 2½ lb kohlrabi (about 6 medium), trimmed (don't peel)
  • 2 Tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • 1 tsp salt
  • ⅔ cup sour cream
  • ½ cup mayonnaise
  • ¼ tsp ground black pepper

Side Dish Instructions

  1. Preheat oven to 275°F. Using a mandoline, slice kohlrabi 1/16 inch thick. In a large bowl whisk together oil, cumin, coriander, and ½ tsp salt. Add kohlrabi slices; toss to coat. Arrange slices in a single layer on two extra-large baking sheets.
  2. Bake 40 to 75 minutes or until chips are golden brown and crisp, rotating pans, switching rack placement, and turning chips once after 30 minutes. Start checking every 5 minutes after 30 minutes, removing chips from baking sheets as they are done. Cool on a wire rack.
  3. For dip, in a small bowl combine sour cream, mayonnaise, ¼ tsp. kosher salt, and black pepper. Serve with chips.
