Taco Salad

Ingredients

  • 8 oz lean ground beef or uncooked ground turkey
  • 3 cloves garlic, minced
  • 1 (15-oz) can dark red kidney beans or black beans, rinsed and drained
  • 1 cup salsa
  • ¾ cup frozen whole kernel corn, thawed (optional)
  • 6 cups shredded leaf or iceberg lettuce
  • 1 cup chopped tomatoes
  • 1 cup chopped green sweet pepper
  • ½ cup thinly sliced green onions
  • 1 cup chopped avocado (optional)
  • ¾ cup shredded sharp Cheddar cheese (3 oz)

Instructions

  1. In a medium saucepan cook ground beef and garlic until beef is browned. Drain off fat. Stir in kidney beans, salsa, and, if desired, thawed corn. Bring to boiling; reduce heat. Simmer, covered, 10 minutes.
  2. Arrange lettuce on a platter or in dishes. Top with hot meat mixture, tomatoes, sweet pepper, and green onions. If desired, top with avocado. Sprinkle with cheese.
