Taco Salad

Ingredients
- 8 oz lean ground beef or uncooked ground turkey
- 3 cloves garlic, minced
- 1 (15-oz) can dark red kidney beans or black beans, rinsed and drained
- 1 cup salsa
- ¾ cup frozen whole kernel corn, thawed (optional)
- 6 cups shredded leaf or iceberg lettuce
- 1 cup chopped tomatoes
- 1 cup chopped green sweet pepper
- ½ cup thinly sliced green onions
- 1 cup chopped avocado (optional)
- ¾ cup shredded sharp Cheddar cheese (3 oz)
Instructions
- In a medium saucepan cook ground beef and garlic until beef is browned. Drain off fat. Stir in kidney beans, salsa, and, if desired, thawed corn. Bring to boiling; reduce heat. Simmer, covered, 10 minutes.
- Arrange lettuce on a platter or in dishes. Top with hot meat mixture, tomatoes, sweet pepper, and green onions. If desired, top with avocado. Sprinkle with cheese.
