Chocolate Chip Zucchini Bread

Ingredients
- ½ cup vanilla Greek yogurt
- 1 tsp vanilla extract
- 2 large eggs
- ⅓ cup coconut oil, melted
- ¾ cup packed brown sugar
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- 1 cup grated zucchini
- 1¼ cups mini chocolate chips
Instructions
- Preheat oven to 325°F. Line a 9- x 5-inch loaf pan with parchment paper; coat with cooking spray.
- Stir together yogurt, vanilla, eggs, and coconut oil until all blended. Stir in sugar. Stir together flour, baking soda, salt, and cinnamon. Stir into sugar mixture until just combined.
- Press grated zucchini between paper towels to remove excess liquid. Fold zucchini and 1 cup mini chocolate chips into batter. Pour batter into loaf pan. Sprinkle with ¼ cup chocolate chips.
- Bake 40 to 50 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 to 15 minutes. Transfer from pan to a wire rack, and cool completely.
