Chocolate Chip Zucchini Bread

Ingredients

  • ½ cup vanilla Greek yogurt
  • 1 tsp vanilla extract
  • 2 large eggs
  • ⅓ cup coconut oil, melted
  • ¾ cup packed brown sugar
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 cup grated zucchini
  • 1¼ cups mini chocolate chips

Instructions

  1. Preheat oven to 325°F. Line a 9- x 5-inch loaf pan with parchment paper; coat with cooking spray.
  2. Stir together yogurt, vanilla, eggs, and coconut oil until all blended. Stir in sugar. Stir together flour, baking soda, salt, and cinnamon. Stir into sugar mixture until just combined.
  3. Press grated zucchini between paper towels to remove excess liquid. Fold zucchini and 1 cup mini chocolate chips into batter. Pour batter into loaf pan. Sprinkle with ¼ cup chocolate chips.
  4. Bake 40 to 50 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 to 15 minutes. Transfer from pan to a wire rack, and cool completely.
