Asian Beef Stir-Fry

Sesame-Cilantro Basmati Rice

Ingredients

  • ¾ lb flank steak, thinly sliced (see Note)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp dark sesame oil
  • 1½ cups low-sodium beef broth
  • 2 Tbsp low-sodium soy sauce
  • 1 clove garlic, minced
  • 1 Tbsp ginger paste
  • 1½ Tbsp arrowroot
  • 1 (12-oz) pkg vegetable stir-fry medley (such as Eat Smart)

Instructions

  1. Season steak with salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 3 minutes or to desired doneness.
  2. Stir together broth, soy sauce, garlic, ginger paste, and arrowroot; add to skillet. Bring to a boil. Cook, stirring constantly, 1 minute or until thickened.
  3. Meanwhile, steam vegetables according to package directions; stir into beef mixture.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable brown basmati rice
  • 1 Tbsp chopped fresh cilantro
  • ½ Tbsp sesame seeds

Side Dish Instructions

  1. Heat rice according to package directions. Stir in cilantro and sesame seeds.
