One-Pot Taco Spaghetti

Ingredients

  • ½ lb ground beef
  • ½ (1-oz) envelope taco seasoning mix
  • 1 (10-oz) can mild diced tomatoes and green chiles
  • 1 Tbsp tomato paste
  • 1½ cups water
  • 4 oz thin spaghetti, broken in half
  • 1 cup shredded Mexican-blend cheese
  • 1 tomato, diced
  • ⅓ cup sour cream

Instructions

  1. Cook beef in a skillet over medium-high heat until browned and crumbly; drain and return to skillet.
  2. Stir in taco seasoning, canned tomatoes, tomato paste, and water. Add spaghetti; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until spaghetti is tender, stirring occasionally.
  3. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with diced tomatoes. Top each serving with sour cream .
