Surf-and-Turf Stir-Fry

Ingredients

  • 1 lb peeled and deveined, large raw shrimp
  • 2 Tbsp olive oil
  • 1 lb flank steak, partially frozen
  • 2 cloves garlic, minced
  • 1 (12-oz) pkg broccoli florets
  • 1 red bell pepper, thinly sliced
  • 6 green onions, thinly sliced
  • 1 Tbsp minced ginger
  • 1 (13.5-oz) can unsweetened coconut milk
  • 2 Tbsp soy sauce
  • 1 Tbsp cornstarch
  • 1 Tbsp chopped fresh cilantro

Instructions

  1. Season shrimp lightly with salt and pepper. Cook in hot oil in a large nonstick skillet or wok over medium-high heat 2 to 3 minutes or just until shrimp turn pink. Remove from skillet, and keep warm.
  2. Thinly slice steak across the grain. Cook in skillet 2 minutes. Add garlic, broccoli, bell pepper, green onions, and ginger; cook 6 minutes or until tender.
  3. Whisk together coconut milk, soy sauce, and cornstarch in a small bowl; add to skillet, and bring to a boil. Boil 1 to 2 minutes, stirring constantly, or until thickened. Stir in shrimp, and cook 1 minute. Stir in cilantro.
