One-Pot Sausage and White Bean Pasta

Ingredients

  • ½ (19.5-oz) pkg ground sweet Italian turkey sausage
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 (14.5-oz) can petite-diced tomatoes
  • 2 cups low-sodium chicken broth
  • 6 oz bow-tie pasta
  • ½ (10-oz) pkg spinach
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook sausage, onion, and garlic in a large skillet over medium heat until sausage is browned and crumbly; drain and return to skillet.
  2. Stir in beans, tomatoes, and broth; bring to a boil. Stir in pasta; cover, reduce heat, and simmer 10 minutes or until pasta is tender, stirring occasionally. Stir in spinach until wilted. Sprinkle with cheese.
