Chicken Caesar Pasta

Ingredients

  • 1 (16-oz) pkg angel hair pasta
  • 10 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 1½ cups chicken broth
  • 1 (16-oz) bottle Caesar dressing
  • 2 Tbsp fresh lemon juice
  • 3 Tbsp chopped fresh parsley
  • 2 Roma tomatoes, chopped

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook bacon in a large deep skillet over medium heat until crisp; drain, reserving drippings in skillet.
  3. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Cook chicken in drippings over medium heat 5 to 6 minutes per side or until done. Remove from skillet, and thinly slice.
  4. Cook garlic in hot drippings 30 seconds. Add broth, scraping skillet to loosen browned bits. Stir in dressing, lemon juice, parsley, pasta, and chicken. Cook until thoroughly heated. Sprinkle with bacon and tomatoes.

  • ½ (16-oz) pkg spinach
  • 2 apples, cored and chopped
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients just before serving.
