Blueberry-Walnut Baked Oatmeal

Ingredients

  • 2 cups quick-cooking oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 cups 1% low-fat milk
  • 2 large eggs
  • ½ cup honey
  • 2 Tbsp butter, melted
  • 2 tsp pure vanilla extract
  • 1 (12-oz) pkg frozen blueberries
  • ½ cup chopped walnuts

Instructions

  1. Preheat oven to 375°F.
  2. Combine oats, baking powder, cinnamon and salt in a large bowl.
  3. Whisk together milk, eggs, honey, butter and vanilla in a bowl. Add milk mixture and half of blueberries to oats mixture; stir until combined.
  4. Spread oats mixture in a 2-quart baking dish coated with cooking spray; top with nuts and remaining half of blueberries.
  5. Bake 15 to 20 minutes or until golden brown and set.
