Blueberry-Walnut Baked Oatmeal

Ingredients
- 2 cups quick-cooking oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp salt
- 2 cups 1% low-fat milk
- 2 large eggs
- ½ cup honey
- 2 Tbsp butter, melted
- 2 tsp pure vanilla extract
- 1 (12-oz) pkg frozen blueberries
- ½ cup chopped walnuts
Instructions
- Preheat oven to 375°F.
- Combine oats, baking powder, cinnamon and salt in a large bowl.
- Whisk together milk, eggs, honey, butter and vanilla in a bowl. Add milk mixture and half of blueberries to oats mixture; stir until combined.
- Spread oats mixture in a 2-quart baking dish coated with cooking spray; top with nuts and remaining half of blueberries.
- Bake 15 to 20 minutes or until golden brown and set.
