Asian Vegetable Dumpling Soup
Pineapple with Honey and Lime
Ingredients
- 4 cups organic vegetable stock
- 2 cups water
- 1 (2-inch) piece ginger, peeled and thinly sliced
- 1 (13-oz) pkg frozen vegetable potstickers
- 1 (4-oz) pkg shiitake mushrooms, thinly sliced
- 1 small head Napa cabbage, thinly sliced
- 2 cups frozen shelled edamame
- 1 Tbsp low-sodium soy sauce
- 2 green onions, sliced
Instructions
- Bring stock, water and ginger to a boil in a large saucepan. Discard sauce packet from potstickers package; add potstickers to stock mixture.
- Reduce heat, and simmer 6 to 8 minutes or until potstickers are just tender.
- Add mushrooms, cabbage and edamame; simmer 3 minutes or until thoroughly heated. Stir in soy sauce.
- Sprinkle with green onions before serving.
Side Dish Ingredients
- 2 cups cubed pineapple
- 1 Tbsp honey
- 1 Tbsp fresh lime juice
Side Dish Instructions
- Combine all ingredients in a serving bowl; toss to coat.
