Asian Vegetable Dumpling Soup

Ingredients

  • 4 cups organic vegetable stock
  • 2 cups water
  • 1 (2-inch) piece ginger, peeled and thinly sliced
  • 1 (13-oz) pkg frozen vegetable potstickers
  • 1 (4-oz) pkg shiitake mushrooms, thinly sliced
  • 1 small head Napa cabbage, thinly sliced
  • 2 cups frozen shelled edamame
  • 1 Tbsp low-sodium soy sauce
  • 2 green onions, sliced

Instructions

  1. Bring stock, water and ginger to a boil in a large saucepan. Discard sauce packet from potstickers package; add potstickers to stock mixture.
  2. Reduce heat, and simmer 6 to 8 minutes or until potstickers are just tender.
  3. Add mushrooms, cabbage and edamame; simmer 3 minutes or until thoroughly heated. Stir in soy sauce.
  4. Sprinkle with green onions before serving.

Side Dish Ingredients

  • 2 cups cubed pineapple
  • 1 Tbsp honey
  • 1 Tbsp fresh lime juice

Side Dish Instructions

  1. Combine all ingredients in a serving bowl; toss to coat.
