Monterey Chicken Skillet
Lemon-Garlic Steamed BroccoliIngredients
- 3 slices bacon
- 1 lb boneless, skinless chicken breasts, halved lengthwise
- ¾ cup spicy barbecue sauce
- ½ cup shredded Cheddar-Jack cheese
- ½ tomato, chopped
- 1 green onion, chopped
Instructions
- Cook bacon in a large skillet 4 to 5 minutes or until crisp. Drain, reserving drippings in skillet. Coarsely crumble bacon.
- Cook chicken in hot drippings in skillet over medium-high heat 3 to 4 minutes per side or until browned. Add barbecue sauce; cover and cook 2 to 3 minutes or until bubbly and chicken is done.
- Sprinkle chicken with cheese; cover and cook 1 to 2 minutes or until cheese is melted. Top with bacon, tomato, and onion.

- 1 (12-oz) pkg broccoli florets
- 1 Tbsp olive oil
- 1½ tsp fresh lemon juice
- ¼ tsp garlic salt
- ¼ tsp pepper

- Cook broccoli according to package directions. Combine all ingredients in a bowl; toss.
