Lemon-Garlic Steamed Broccoli

Ingredients

  • 3 slices bacon
  • 1 lb boneless, skinless chicken breasts, halved lengthwise
  • ¾ cup spicy barbecue sauce
  • ½ cup shredded Cheddar-Jack cheese
  • ½ tomato, chopped
  • 1 green onion, chopped

Instructions

  1. Cook bacon in a large skillet 4 to 5 minutes or until crisp. Drain, reserving drippings in skillet. Coarsely crumble bacon.
  2. Cook chicken in hot drippings in skillet over medium-high heat 3 to 4 minutes per side or until browned. Add barbecue sauce; cover and cook 2 to 3 minutes or until bubbly and chicken is done.
  3. Sprinkle chicken with cheese; cover and cook 1 to 2 minutes or until cheese is melted. Top with bacon, tomato, and onion.

  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp olive oil
  • 1½ tsp fresh lemon juice
  • ¼ tsp garlic salt
  • ¼ tsp pepper

  1. Cook broccoli according to package directions. Combine all ingredients in a bowl; toss.
