Mediterranean Chicken and Pasta
Pita ChipsIngredients
- 1 (16-oz) pkg penne pasta
- 1½ lb boneless, skinless chicken breasts, cubed
- 2 Tbsp olive oil
- 1 (16-oz) bottle balsamic vinaigrette
- 2 tomatoes, chopped
- ¼ cup (or more) sliced fresh basil
- 1 (12-oz) pkg classic salad mix
- 1 (4-oz) pkg crumbled feta cheese
Instructions
- Cook pasta according to package directions; drain and place in a large bowl.
- Meanwhile, season chicken with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat until done. Add to pasta along with desired amount of dressing. Stir in tomatoes and basil.
- Divide salad mix among 6 plates; top with pasta mixture, and, if desired, more dressing. Sprinkle with cheese. Season with salt and pepper to taste.

- 6 pita bread rounds
- ½ tsp garlic salt
Side Dish Instructions
- Preheat oven to 450°F. Cut pitas into wedges, and place on a baking sheet. Coat with cooking spray, and sprinkle with garlic salt.
- Bake 5 minutes or until crisp.
