Vegetable Lo Mein
Ginger-Lemon Asian PearsIngredients
- 1 (16-oz) pkg spaghetti
- 2 Tbsp sesame oil
- 1 (8-oz) pkg sliced mushrooms
- 4 cloves garlic, minced
- 2 (16-oz) pkg frozen sugar snap stir-fry vegetables
- 1 (10-oz) pkg frozen shelled edamame
- ¼ cup low-sodium soy sauce
- 1 Tbsp brown sugar
Instructions
- Cook spaghetti according to package directions; drain, reserving ¼ cup pasta water.
- Meanwhile, heat sesame oil in a large skillet over medium heat; add mushrooms and garlic.
- Sauté 5 minutes; add vegetables and edamame.
- Sauté 10 minutes or until vegetables are tender.
- Whisk together soy sauce and brown sugar; add to vegetables.
- Stir in spaghetti and ¼ cup pasta water; cook 2 minutes or until thoroughly heated.
Side Dish Ingredients
- 2 Asian pears, cored and thinly sliced
- ½ Tbsp fresh lemon juice
- ½ Tbsp agave nectar
- ½ tsp minced ginger
Side Dish Instructions
- Place pears in a serving bowl; whisk together lemon juice, agave and ginger.
- Pour over pears; toss to coat .
