Vegetable Lo Mein

Ginger-Lemon Asian Pears

Ingredients

  • 1 (16-oz) pkg spaghetti
  • 2 Tbsp sesame oil
  • 1 (8-oz) pkg sliced mushrooms
  • 4 cloves garlic, minced
  • 2 (16-oz) pkg frozen sugar snap stir-fry vegetables
  • 1 (10-oz) pkg frozen shelled edamame
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp brown sugar

Instructions

  1. Cook spaghetti according to package directions; drain, reserving ¼ cup pasta water.
  2. Meanwhile, heat sesame oil in a large skillet over medium heat; add mushrooms and garlic.
  3. Sauté 5 minutes; add vegetables and edamame.
  4. Sauté 10 minutes or until vegetables are tender.
  5. Whisk together soy sauce and brown sugar; add to vegetables.
  6. Stir in spaghetti and ¼ cup pasta water; cook 2 minutes or until thoroughly heated.

Side Dish Ingredients

  • 2 Asian pears, cored and thinly sliced
  • ½ Tbsp fresh lemon juice
  • ½ Tbsp agave nectar
  • ½ tsp minced ginger

Side Dish Instructions

  1. Place pears in a serving bowl; whisk together lemon juice, agave and ginger.
  2. Pour over pears; toss to coat .
