Tamale Pie
Winter Fruit SaladIngredients
- 2 lb lean ground beef
- 1 tsp chili powder
- 2 (10-oz) cans enchilada sauce
- 1 (8.5-oz) pkg corn muffin mix
- ½ cup shredded sharp Cheddar cheese
- ⅓ cup milk
- 1 large egg
Instructions
- Preheat oven to 400°F. Cook beef in a large cast-iron skillet 5 minutes or until browned; stir in chili powder and enchilada sauce.
- Stir together muffin mix, cheese, milk, and egg; dollop and spread over beef mixture.
- Bake 20 minutes or until a wooden pick inserted in cornbread comes out clean.

- 1 (16-oz) container cored pineapple, cubed
- 2 cups seedless red grapes
- 3 apples, chopped

- Combine all ingredients in a bowl. Chill until ready to serve.
