Ingredients

  • 2 lb lean ground beef
  • 1 tsp chili powder
  • 2 (10-oz) cans enchilada sauce
  • 1 (8.5-oz) pkg corn muffin mix
  • ½ cup shredded sharp Cheddar cheese
  • ⅓ cup milk
  • 1 large egg

Instructions

  1. Preheat oven to 400°F. Cook beef in a large cast-iron skillet 5 minutes or until browned; stir in chili powder and enchilada sauce.
  2. Stir together muffin mix, cheese, milk, and egg; dollop and spread over beef mixture.
  3. Bake 20 minutes or until a wooden pick inserted in cornbread comes out clean.

Side Dish Ingredients

  • 1 (16-oz) container cored pineapple, cubed
  • 2 cups seedless red grapes
  • 3 apples, chopped

Side Dish Instructions

  1. Combine all ingredients in a bowl. Chill until ready to serve.
