Creamy Cajun Sausage Pasta

Steamed Broccoli and Crisp Cucumber Spears

Ingredients

  • 3 oz whole-grain penne pasta
  • 2 tsp extra virgin olive oil
  • 3 oz smoked turkey sausage, thinly sliced
  • 1 small green bell pepper, sliced
  • ⅓ cup grape tomatoes, halved
  • ⅓ cup chopped red onion
  • 3 Tbsp water
  • ¼ cup fat-free evaporated milk
  • 1 tsp seafood seasoning

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, heat 1 tsp oil in a medium nonstick skillet over medium-high heat, add sausage, and cook 3 to 4 minutes or until edges begin to brown. Transfer sausage to a plate.
  3. Heat 1 tsp oil in skillet, add bell pepper, tomatoes and onion; sauté 4 minutes or until onions are translucent. Add water, sausage and any accumulated juices from plate to skillet, scraping the bottom and sides of skillet.
  4. Stir in pasta, evaporated milk and seasoning. Cook 7 to 8 minutes or until slightly thickened, stirring occasionally.

Side Dish Ingredients

  • 2 cups frozen broccoli florets
  • 2 tsp extra virgin olive oil
  • ⅛ tsp salt
  • 1 cucumber, peeled and cut into spears

Side Dish Instructions

  1. Arrange broccoli in a steamer basket over boiling water; cover and steam 3 to 5 minutes or until tender. Drizzle with oil, and sprinkle with salt.
  2. Serve broccoli and cucumber spears alongside pasta.
