Creamy Cajun Sausage Pasta
Steamed Broccoli and Crisp Cucumber SpearsIngredients
- 3 oz whole-grain penne pasta
- 2 tsp extra virgin olive oil
- 3 oz smoked turkey sausage, thinly sliced
- 1 small green bell pepper, sliced
- ⅓ cup grape tomatoes, halved
- ⅓ cup chopped red onion
- 3 Tbsp water
- ¼ cup fat-free evaporated milk
- 1 tsp seafood seasoning
Instructions
- Cook pasta according to package directions.
- Meanwhile, heat 1 tsp oil in a medium nonstick skillet over medium-high heat, add sausage, and cook 3 to 4 minutes or until edges begin to brown. Transfer sausage to a plate.
- Heat 1 tsp oil in skillet, add bell pepper, tomatoes and onion; sauté 4 minutes or until onions are translucent. Add water, sausage and any accumulated juices from plate to skillet, scraping the bottom and sides of skillet.
- Stir in pasta, evaporated milk and seasoning. Cook 7 to 8 minutes or until slightly thickened, stirring occasionally.
Side Dish Ingredients
- 2 cups frozen broccoli florets
- 2 tsp extra virgin olive oil
- ⅛ tsp salt
- 1 cucumber, peeled and cut into spears
Side Dish Instructions
- Arrange broccoli in a steamer basket over boiling water; cover and steam 3 to 5 minutes or until tender. Drizzle with oil, and sprinkle with salt.
- Serve broccoli and cucumber spears alongside pasta.
