Three-Cheese Pasta Bake

Ingredients

  • 4 oz whole-grain rotini or penne pasta
  • 1 cup low-sodium tomato-basil pasta sauce
  • ¼ cup part-skim ricotta cheese
  • 2 tsp freshly grated Parmesan cheese
  • ¼ tsp Italian seasoning
  • 1 small clove garlic
  • ¼ tsp salt
  • 2 (0.74-oz) slices reduced-fat Swiss cheese, torn into pieces

Instructions

  1. Preheat oven to 400°F. Cook pasta according to package directions.
  2. Stir together cooked pasta, ⅔ cup pasta sauce, ricotta cheese, Parmesan cheese, Italian seasoning, garlic and salt.
  3. Spread mixture in a small baking dish coated with cooking spray. Top with remaining pasta sauce and Swiss cheese.
  4. Bake 20 to 25 minutes or until bubbly and browned.

Side Dish Ingredients

  • 3 cups broccoli florets
  • 2 tsp extra virgin olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together broccoli florets, oil, salt and pepper in a bowl.
  2. Carefully spread broccoli mixture on a baking sheet. Bake 15 to 20 minutes or until broccoli is browned and tender, stirring after 10 minutes.
