Three-Cheese Pasta Bake
Roasted BroccoliIngredients
- 4 oz whole-grain rotini or penne pasta
- 1 cup low-sodium tomato-basil pasta sauce
- ¼ cup part-skim ricotta cheese
- 2 tsp freshly grated Parmesan cheese
- ¼ tsp Italian seasoning
- 1 small clove garlic
- ¼ tsp salt
- 2 (0.74-oz) slices reduced-fat Swiss cheese, torn into pieces
Instructions
- Preheat oven to 400°F. Cook pasta according to package directions.
- Stir together cooked pasta, ⅔ cup pasta sauce, ricotta cheese, Parmesan cheese, Italian seasoning, garlic and salt.
- Spread mixture in a small baking dish coated with cooking spray. Top with remaining pasta sauce and Swiss cheese.
- Bake 20 to 25 minutes or until bubbly and browned.
Side Dish Ingredients
- 3 cups broccoli florets
- 2 tsp extra virgin olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together broccoli florets, oil, salt and pepper in a bowl.
- Carefully spread broccoli mixture on a baking sheet. Bake 15 to 20 minutes or until broccoli is browned and tender, stirring after 10 minutes.
