Paleo Chocolate-Almond Truffles

Ingredients
- 1 (10-oz) pkg paleo chocolate chips
- ½ cup coconut milk
- 2 cups finely chopped raw almonds, divided
- ½ tsp salt
Instructions
- Place chocolate in a heatproof bowl.
- Microwave coconut milk at HIGH 1 minute or until just beginning to bubble. Pour coconut milk over chocolate; let stand 2 minutes. Whisk until smooth. If chocolate is still lumpy, microwave 15 seconds.
- Stir in ½ cup nuts and salt. Cover and chill 2 hours or until firm.
- Scoop truffle mixture into 1-inch balls using a cookie scoop or melon baller. Place on a parchment paper-lined baking sheet. Chill truffle mixture if it becomes too soft while scooping.
- Roll truffles in 1½ cups nuts. Store, covered, in refrigerator.
