Cilantro-Lime Shrimp Wraps

Ingredients

  • ¾ lb unpeeled, large raw shrimp, peeled and deveined
  • 2 Tbsp olive oil, divided
  • 2 Tbsp chopped fresh cilantro
  • 1 tsp lime zest
  • 2 Tbsp fresh lime juice
  • 1 tsp ground cumin
  • 2 cloves garlic, minced
  • 1 small head iceberg lettuce
  • 1 avocado, sliced
  • 1 Roma tomato, chopped

Instructions

  1. Combine shrimp, 1 Tbsp oil, cilantro, lime zest, lime juice, cumin, and garlic in a large bowl. Let stand 15 minutes.
  2. Cook shrimp mixture in 1 Tbsp hot oil in a nonstick skillet over medium-high heat until shrimp turn pink.
  3. Separate lettuce leaves. Serve shrimp mixture on lettuce leaves with avocado and tomato.

Side Dish Ingredients

  • 1 (7-oz) pkg coconut-ginger rice
  • 1 (8-oz) can pineapple tidbits, drained

Side Dish Instructions

  1. Cook rice according to package directions. Stir in pineapple.
