Chicken with Olive-Mixed Grains Pilaf

Ingredients
- 2 (8.5-oz) pouches microwavable seven whole-grains mix (such as Seeds of Change)
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 pint grape tomatoes
- 1 Tbsp fresh lemon juice
- ½ cup kalamata olive salad or Italian olive salad (such as Boscoli), drained
- ¼ cup chopped fresh parsley
Instructions
- Cook grains according to package directions.
- Meanwhile, sprinkle chicken with salt and pepper. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet.
- Add tomatoes and lemon juice to skillet; cook 2 to 3 minutes or until tomatoes are beginning to burst. Remove from heat. Stir in grains, olive salad, and parsley.
- Serve grains alongside chicken.
