Chicken with Olive-Mixed Grains Pilaf

Ingredients

  • 2 (8.5-oz) pouches microwavable seven whole-grains mix (such as Seeds of Change)
  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 pint grape tomatoes
  • 1 Tbsp fresh lemon juice
  • ½ cup kalamata olive salad or Italian olive salad (such as Boscoli), drained
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook grains according to package directions.
  2. Meanwhile, sprinkle chicken with salt and pepper. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet.
  3. Add tomatoes and lemon juice to skillet; cook 2 to 3 minutes or until tomatoes are beginning to burst. Remove from heat. Stir in grains, olive salad, and parsley.
  4. Serve grains alongside chicken.
