Pepperoni-Mushroom Cauliflower Pizzas
Caesar SaladIngredients
- 2 (7.5-oz) cauliflower pizza crusts (such as Green Giant)
- 2 (8-oz) pkg sliced mushrooms
- 2 Tbsp minced garlic
- 2 Tbsp olive oil
- 1 (6-oz) pkg baby spinach
- 1 cup natural marinara sauce (such as Rao's)
- 1 cup shredded mozzarella cheese
- ½ (4-oz) pkg turkey pepperoni
Instructions
- Preheat oven to 425°F. Place crusts on two baking sheets; bake 15 minutes.
- Meanwhile, cook mushrooms and garlic in hot oil in a large skillet over medium-high heat 4 to 6 minutes or until mushrooms are browned. Stir in spinach; cook 1 to 2 minutes or until wilted and moisture has evaporated.
- Spread marinara and vegetable mixture over crusts; top with cheese and pepperoni. Bake 5 minutes longer or until cheese is melted. Cut into wedges.
Side Dish Ingredients
- 2 (9-oz) pkg chopped romaine lettuce
- ½ cup refrigerated yogurt Caesar dressing (such as Bolthouse Farms)
- ½ cup freshly grated Parmesan cheese
- ½ cup Caesar croutons
Side Dish Instructions
- Toss together lettuce and dressing in a bowl. Sprinkle with cheese and croutons.
