Goat Cheese-Pesto Naan Pizzas

Ingredients

  • 2 (8.8-oz) pkg naan (preferably whole-grain)
  • ½ cup pine nuts
  • ½ cup pesto
  • ½ cup crumbled goat cheese
  • 2 Roma tomatoes, sliced
  • ¼ tsp kosher salt
  • ½ tsp pepper
  • 2 Tbsp extra virgin olive oil
  • 1 cup arugula

Instructions

  1. Preheat oven to 450°F. Bake naan on a large baking sheet 6 to 8 minutes or until browned.
  2. Meanwhile, toast nuts in a large skillet over medium heat 3 to 4 minutes or until fragrant.
  3. Spread pesto over naan; sprinkle with cheese and nuts. Top with tomatoes. Bake 10 minutes longer or until lightly browned and cheese is melted.
  4. Sprinkle with salt and pepper. Drizzle with oil, and top with arugula. Cut into wedges to serve.

  • 1 (16-oz) pkg strawberries, halved
  • 2 Tbsp chopped fresh basil
  • 2 Tbsp balsamic glaze

  1. Toss together strawberries and basil in a bowl; drizzle with balsamic glaze.
