Ingredients

  • ½ cup mayonnaise
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 1 tsp ground turmeric
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cups coarsely chopped rotisserie chicken
  • 2 Honeycrisp apples, diced
  • ½ cup thinly sliced red onion
  • 2 (5-oz) pkg baby kale-spinach mix

Instructions

  1. Whisk together mayonnaise, lemon juice, honey, turmeric, salt, and pepper in a large bowl. Add chicken, apples, and onion; toss.
  2. Serve over kale-spinach mix.
