Mexican Mole Chili
Garlic Cornbread Croutons
Ingredients
- 1½ lb ground beef
- 1 cup chopped onion
- 2 Tbsp minced garlic
- 2 (14.5-oz) cans zesty chili-style diced tomatoes (such as Del Monte)
- 1 (12-oz) bottle dark beer
- 1 oz semisweet chocolate, chopped
- 3 Tbsp Mexican seasoning (such as McCormick)
- ½ cup sour cream
Instructions
- Cook beef, onion, and garlic in a Dutch oven over medium-high heat 5 minutes or until beef is browned and crumbly.
- Add tomatoes, beer, chocolate, and seasoning; reduce heat, and simmer 10 minutes, stirring until chocolate is melted. Serve with sour cream and top with Garlic Cornbread Croutons.
Side Dish Ingredients
- 1 (15-oz) pkg bakery cornbread, cut into large cubes
- 4 Tbsp butter, melted
- 2 tsp minced garlic
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients in a bowl. Arrange in a single layer on a rimmed baking sheet. Bake 10 minutes or until golden, stirring once.
