Creamy Spinach-Tomato Spaghetti

Ingredients

  • 1 (16-oz) pkg whole wheat spaghetti
  • 2 (28-oz) cans BPA-free organic whole peeled tomatoes, undrained and coarsely chopped
  • 2 green onions, chopped
  • ¼ cup chopped fresh basil
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 (10-oz) pkg organic baby spinach
  • ¾ cup ricotta cheese
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain pasta, reserving ½ cup pasta water.
  2. Meanwhile, cook tomatoes, green onions, basil, lemon juice, oil, salt, and pepper in a Dutch oven over medium-high heat 15 minutes or until slightly thickened.
  3. Add pasta to tomato mixture. Stir in spinach, ricotta, Parmesan, and reserved pasta water; toss until spinach wilts.
