One Dish Dinner
Creamy Spinach-Tomato Spaghetti
Ingredients
- 1 (16-oz) pkg whole wheat spaghetti
- 2 (28-oz) cans BPA-free organic whole peeled tomatoes, undrained and coarsely chopped
- 2 green onions, chopped
- ¼ cup chopped fresh basil
- 1 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- 2 (10-oz) pkg organic baby spinach
- ¾ cup ricotta cheese
- 1 cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain pasta, reserving ½ cup pasta water.
- Meanwhile, cook tomatoes, green onions, basil, lemon juice, oil, salt, and pepper in a Dutch oven over medium-high heat 15 minutes or until slightly thickened.
- Add pasta to tomato mixture. Stir in spinach, ricotta, Parmesan, and reserved pasta water; toss until spinach wilts.
