Apple-and-Cheddar Grilled Cheese

Ingredients

  • 3 Tbsp whole-grain mustard
  • 3 Tbsp olive-oil mayonnaise
  • 12 slices sandwich bread (preferably whole wheat)
  • 1 (8-oz) block sharp Cheddar cheese, shredded
  • 1 large organic Honeycrisp apple, cored and thinly sliced
  • ¼ cup butter

Instructions

  1. Combine mustard and mayonnaise in a bowl; spread over bread. Sprinkle cheese onto 6 bread slices; top with apples and remaining 6 bread slices.
  2. Melt 2 Tbsp butter in a large skillet over medium-high heat. Place 3 sandwiches in skillet; cook 2 to 3 minutes per side or until golden brown and cheese is melted. Repeat with 2 Tbsp butter and 3 sandwiches.

Side Dish Ingredients

  • 1 Tbsp butter
  • 2 cloves garlic, minced
  • 2 (12-oz) pkg frozen winter squash puree, thawed
  • 3 cups organic vegetable broth
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup chopped fresh parsley

Side Dish Instructions

  1. Melt butter in a large saucepan over medium heat; add garlic. Sauté 1 minute or until tender.
  2. Add squash, broth, salt, and pepper. Bring to a boil; reduce heat, and simmer 30 minutes or until soup is thickened. Stir in parsley before serving.
