Sausage, Broccolini, and Bell Pepper Sauté

Ingredients

  • 1½ lb pork sausage links
  • 3 Tbsp olive oil
  • 2 bunches Broccolini, trimmed
  • 2 organic red bell peppers, thinly sliced
  • ¼ cup low-sodium chicken broth
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 2 cloves garlic, minced
  • ½ tsp pepper
  • ¼ tsp salt

Instructions

  1. Cook sausage in hot oil in a Dutch oven over medium heat until browned and no longer pink. Remove sausage from pot, and keep warm.
  2. Add broccolini and bell peppers to pot. Sauté 5 minutes or until tender.
  3. Stir together remaining ingredients. Add to pot along with sausage. Cook 5 minutes or until sauce is slightly reduced.

Side Dish Ingredients

  • 2 lb organic Yukon Gold potatoes, cut into 1-inch wedges
  • 3 Tbsp olive oil
  • 1 Tbsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potatoes, oil, garlic powder, salt, and pepper on a greased rimmed baking sheet. Spread potatoes in a single layer.
  2. Bake 20 to 25 minutes or until potatoes are browned and tender, stirring occasionally.
