Cheesy Rigatoni Bake

Ingredients

  • ½ (16-oz) pkg rigatoni
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg, lightly beaten
  • ½ (24-oz) can marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a saucepan over medium-low heat; whisk in flour and salt. Cook, stirring constantly, 2 minutes. Gradually add milk, stirring until smooth. Cook, stirring occasionally, until thickened and bubbly.
  3. Drain pasta, and return to pot. Add egg to pasta; toss. Place half of mixture in a lightly greased 11- x 7-inch baking dish. Layer with marinara sauce, ½ cup cheese, remaining pasta, white sauce, and ½ cup cheese.
  4. Bake 30 to 40 minutes or until browned and bubbly.

  • ½ lb green beans, trimmed
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 375°F. Toss together beans and oil on a rimmed baking sheet. Season lightly with salt and pepper. Bake 15 minutes or until browned and tender.
