Orange-Glazed Chicken
Roasted Green Beans and Tomatoes
Ingredients
- ¾ lb boneless, skinless chicken breasts, halved crosswise
- ¼ cup sugar-free orange marmalade (such as Polaner)
- 1½ Tbsp chopped fresh mint
- 1½ Tbsp soy sauce
- 1 clove garlic, minced
- 2 Tbsp olive oil
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
- Stir together marmalade, mint, soy sauce, and garlic in a small bowl.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done, basting often with marmalade mixture.

- ½ lb thin green beans, trimmed
- ¾ cup grape tomatoes
- 1 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet. Bake 10 minutes or until beans are browned and tomatoes are ready to burst. Season with salt and pepper to taste.
