Pear-Walnut Pancakes

Ingredients
- ⅔ cup water
- 2 large eggs
- 1 large egg white
- ¼ cup ghee, melted
- 6 Tbsp pure maple syrup
- 1 tsp pure vanilla extract
- 2½ cups almond flour
- ½ cup arrowroot
- 1 tsp cream of tartar
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ½ tsp kosher salt
- 1 large pear, peeled and diced
- ½ cup raw walnuts, chopped
Instructions
- Process water, eggs, egg white, 3 Tbsp ghee, 2 Tbsp maple syrup, and vanilla in a blender 30 seconds or until frothy, scraping sides as needed.
- Add almond flour, arrowroot, cream of tartar, baking soda, cinnamon, and salt. Process 1 minute or until blended, scraping sides as needed. Stir pear and nuts into batter.
- Heat a large skillet or griddle over medium-low heat; add 1 tsp ghee.
- For each pancake, pour ¼ cup batter onto hot skillet or griddle. Cook 2 to 4 minutes or until tops are covered with bubbles and edges look cooked.
- Turn and cook 2 to 3 minutes on other side. Repeat with remaining batter and ghee.
- Serve pancakes with ¼ cup maple syrup.
