Pear-Walnut Pancakes

Ingredients

  • ⅔ cup water
  • 2 large eggs
  • 1 large egg white
  • ¼ cup ghee, melted
  • 6 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • 2½ cups almond flour
  • ½ cup arrowroot
  • 1 tsp cream of tartar
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp kosher salt
  • 1 large pear, peeled and diced
  • ½ cup raw walnuts, chopped

Instructions

  1. Process water, eggs, egg white, 3 Tbsp ghee, 2 Tbsp maple syrup, and vanilla in a blender 30 seconds or until frothy, scraping sides as needed.
  2. Add almond flour, arrowroot, cream of tartar, baking soda, cinnamon, and salt. Process 1 minute or until blended, scraping sides as needed. Stir pear and nuts into batter.
  3. Heat a large skillet or griddle over medium-low heat; add 1 tsp ghee.
  4. For each pancake, pour ¼ cup batter onto hot skillet or griddle. Cook 2 to 4 minutes or until tops are covered with bubbles and edges look cooked.
  5. Turn and cook 2 to 3 minutes on other side. Repeat with remaining batter and ghee.
  6. Serve pancakes with ¼ cup maple syrup.
