Vanilla Chia Pudding
Berry-Walnut Sauce
Ingredients
- ⅓ cup chia seeds
- 1 (13.5-oz) can unsweetened coconut milk
- 1 Tbsp raw honey
- ½ tsp pure vanilla extract
- ⅛ tsp salt
Instructions
- Combine chia seeds, coconut milk, honey, vanilla, and salt. Chill overnight.
- Spoon Berry-Walnut Sauce recipe over each serving.
Side Dish Ingredients
- ½ cup raw walnuts
- 1 (12-oz) pkg frozen mixed berries
- 3 Tbsp raw honey
- ½ tsp kosher salt
- ½ tsp pure vanilla extract
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant. Combine berries, nuts, honey, salt, and vanilla in a saucepan.
- Bring to a simmer; cook 10 minutes or until slightly thickened. Cool.
- Chill overnight.
