Chicken and Sausage Jambalaya

Cauli-Rice with Green Onions

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into 2-inch pieces
  • 1 (14-oz) pkg nitrate-free smoked kielbasa sausage, cut into ½-inch slices (see Note)
  • 1 (28-oz) can diced tomatoes
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 stalks celery, diced
  • 1 cup organic chicken broth
  • 4 cloves garlic, minced
  • 2 tsp Creole seasoning
  • 2 bay leaves

Instructions

  1. Combine all ingredients in a 5- to 7-quart slow cooker. Cover and cook on LOW 7 hours.
  2. Remove bay leaves, and serve over Cauli-Rice with Green Onions recipe.

Side Dish Ingredients

  • 2 (12-oz) pkg cauliflower florets
  • 3 Tbsp avocado oil
  • ½ tsp salt
  • ½ tsp pepper
  • 3 green onions, chopped

Side Dish Instructions

  1. Preheat oven to 400°F. Pulse cauliflower in a food processor, in batches, until it resembles rice.
  2. Combine cauliflower, oil, salt, and pepper in a roasting pan. Bake 25 minutes or until browned, stirring once.
  3. Stir onions into cauli-rice before serving.
