Garlic-Herb Pork Chops

Lemon-Basil Mashed Sweet Potatoes

Ingredients

  • ¼ cup fresh lemon juice
  • ¼ cup avocado oil, divided
  • 4 cloves garlic, minced
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp dried thyme
  • 6 bone-in center cut pork loin chops

Instructions

  1. Combine lemon juice, 2 Tbsp oil, garlic, mustard, salt, pepper, and thyme in a shallow bowl or a zip-top plastic bag. Add pork chops; turn to coat. Seal and chill 30 minutes, turning once.
  2. Remove pork chops from marinade; discard marinade.
  3. Cook pork, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done.

Side Dish Ingredients

  • 2½ lb sweet potatoes
  • 2 Tbsp ghee
  • 2 Tbsp chopped fresh basil
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice

Side Dish Instructions

  1. Peel potatoes, and cut into 1-inch chunks.
  2. Bring potatoes and water to cover to a boil in a large saucepan; reduce heat, and simmer 10 minutes or until tender. Drain potatoes well, and return to pan.
  3. Add ghee, basil, lemon zest, and lemon juice.
  4. Mash with a potato masher to desired consistency. Season with salt and pepper to taste.
