Garlic-Herb Pork Chops
Lemon-Basil Mashed Sweet Potatoes
Ingredients
- ¼ cup fresh lemon juice
- ¼ cup avocado oil, divided
- 4 cloves garlic, minced
- 1 Tbsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp dried thyme
- 6 bone-in center cut pork loin chops
Instructions
- Combine lemon juice, 2 Tbsp oil, garlic, mustard, salt, pepper, and thyme in a shallow bowl or a zip-top plastic bag. Add pork chops; turn to coat. Seal and chill 30 minutes, turning once.
- Remove pork chops from marinade; discard marinade.
- Cook pork, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done.
Side Dish Ingredients
- 2½ lb sweet potatoes
- 2 Tbsp ghee
- 2 Tbsp chopped fresh basil
- 1 tsp lemon zest
- 1 tsp fresh lemon juice
Side Dish Instructions
- Peel potatoes, and cut into 1-inch chunks.
- Bring potatoes and water to cover to a boil in a large saucepan; reduce heat, and simmer 10 minutes or until tender. Drain potatoes well, and return to pan.
- Add ghee, basil, lemon zest, and lemon juice.
- Mash with a potato masher to desired consistency. Season with salt and pepper to taste.
