Honey-Citrus Salmon
Garlic-Roasted Brussels SproutsIngredients
- ⅓ cup fresh orange juice
 - 1 Tbsp fresh lemon juice
 - 1 Tbsp fresh lime juice
 - 1 Tbsp raw honey
 - ½ Tbsp Dijon mustard
 - ½ tsp minced fresh thyme
 - 2 (8-oz) salmon fillets
 - ¼ tsp salt
 - ⅛ tsp pepper
 
Instructions
- Combine orange juice, lemon juice, lime juice, and honey in a small saucepan; bring to a boil, reduce heat, and simmer 6 minutes or until reduced by half. Stir in mustard and thyme.
 - Preheat oven to 450°F. Place fish on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Brush with half of orange mixture.
 - Bake 10 to 12 minutes or until fish flakes with a fork. Drizzle with remaining orange sauce.

- 1 lb Brussels sprouts, trimmed and halved
 - 1½ Tbsp avocado oil
 - 1 large clove garlic, minced
 - ½ tsp salt
 - ¼ tsp pepper
 
Side Dish Instructions
- Preheat oven to 450°F. Combine Brussels sprouts, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer.
 - Bake 18 to 20 minutes or until browned, stirring once.
