Chili-Smothered Sweet Potato Fries
Sweet Potato Fries
Ingredients
- ¾ lb grass-fed ground beef
- 1 small carrot, diced
- ½ small green bell pepper, chopped
- ½ small onion, chopped
- 1 clove garlic, minced
- 1 Tbsp avocado oil
- 1 (14.5-oz) can diced tomatoes, drained
- 2 tsp chili powder
- 1½ tsp ground cumin
- ¼ tsp dried oregano
- ¼ tsp salt
- ¼ tsp pepper
- 1 avocado, diced
- ½ pint grape tomatoes, halved
- 2 radishes, sliced
- 2 Tbsp chopped fresh cilantro
Instructions
- Cook beef, carrot, bell pepper, onion, and garlic in hot oil in a Dutch oven over medium-high heat 10 minutes or until beef is browned and crumbly.
- Stir in tomatoes, chili powder, cumin, oregano, salt, and pepper.
- Cover and bring to a boil. Reduce heat, and simmer, uncovered, 20 to 30 minutes.
- Arrange Sweet Potato Fries recipe on a platter; spoon beef mixture over fries. Top with avocado, tomatoes, radishes, and cilantro.
Side Dish Ingredients
- 2 small sweet potatoes, peeled and cut into ½-inch-thick wedges
- 1 Tbsp avocado oil
- ¼ tsp salt
Side Dish Instructions
- Preheat oven to 425°F. Cut potatoes into ½-inch-thick wedges.
- Combine potato wedges, oil, and salt on a rimmed baking sheet; toss.
- Bake 30 to 35 minutes or until tender, stirring once.
