Chili-Smothered Sweet Potato Fries

Ingredients

  • ¾ lb grass-fed ground beef
  • 1 small carrot, diced
  • ½ small green bell pepper, chopped
  • ½ small onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp avocado oil
  • 1 (14.5-oz) can diced tomatoes, drained
  • 2 tsp chili powder
  • 1½ tsp ground cumin
  • ¼ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 avocado, diced
  • ½ pint grape tomatoes, halved
  • 2 radishes, sliced
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook beef, carrot, bell pepper, onion, and garlic in hot oil in a Dutch oven over medium-high heat 10 minutes or until beef is browned and crumbly.
  2. Stir in tomatoes, chili powder, cumin, oregano, salt, and pepper.
  3. Cover and bring to a boil. Reduce heat, and simmer, uncovered, 20 to 30 minutes.
  4. Arrange Sweet Potato Fries recipe on a platter; spoon beef mixture over fries. Top with avocado, tomatoes, radishes, and cilantro.

Side Dish Ingredients

  • 2 small sweet potatoes, peeled and cut into ½-inch-thick wedges
  • 1 Tbsp avocado oil
  • ¼ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F. Cut potatoes into ½-inch-thick wedges.
  2. Combine potato wedges, oil, and salt on a rimmed baking sheet; toss.
  3. Bake 30 to 35 minutes or until tender, stirring once.
