Asian Ground Beef Cabbage Wraps

Ingredients

  • ¾ lb lean ground beef
  • ⅓ (10-oz) pkg shredded carrots
  • 1 clove garlic, minced
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp honey
  • ½ Tbsp rice wine vinegar
  • 1 tsp arrowroot
  • ¼ cup thinly sliced fresh basil
  • 4 savoy cabbage leaves
  • 2 Tbsp dry-roasted, salted peanuts

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  2. Stir in carrots and garlic; cook, stirring often, 2 minutes. Stir together soy sauce, honey, vinegar, and arrowroot. Add to mixture; cook 3 minutes. Stir in basil. Serve in cabbage leaves; sprinkle with nuts.

  • ½ (14-oz) pkg brown rice noodles
  • ¼ cup dry-roasted, salted peanuts, chopped
  • ½ Tbsp sesame oil
  • ½ Tbsp rice wine vinegar
  • ½ Tbsp low-sodium soy sauce
  • 1 green onion, thinly sliced

Side Dish Instructions

  1. Cook noodles according to package directions. Toss noodles with remaining ingredients.
