Lemony Tuna Salad with Grapes and Pecans

Ingredients

  • ¼ cup pecans
  • 2 (12-oz) cans albacore tuna in water, drained
  • 1 cup seedless red grapes, halved
  • 2 stalks celery, chopped
  • ¼ cup chopped red onion
  • ⅓ cup reduced-fat mayonnaise
  • 2 tsp grated lemon rind
  • 2 Tbsp fresh lemon juice

Instructions

  1. Toast pecans in a dry skillet over medium-high heat 2 to 3 minutes or until fragrant; let cool.
  2. Combine pecans, tuna, grapes, celery, and onion in a large bowl. Combine mayonnaise, lemon rind, and lemon juice; pour over tuna mixture.
  3. Toss to coat; season to taste with salt and pepper.

Side Dish Ingredients

  • ½ (7-oz) pkg whole-grain tortilla chips

Side Dish Instructions

  1. Serve chips with salad.
