Asian Ground Beef and Broccoli

Jasmine Rice and Vegetable Egg Rolls

Ingredients

  • ¾ lb ground beef
  • 1 tsp minced garlic
  • ⅛ tsp crushed red pepper
  • 1 Tbsp cornstarch
  • ½ cup chicken broth
  • 3 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 (8-oz) can sliced water chestnuts, drained
  • ½ (12-oz) pkg frozen broccoli florets

Instructions

  1. Cook beef, garlic, and red pepper in a large skillet over medium heat until beef is browned and crumbly. Drain and return to skillet.
  2. Whisk together cornstarch, broth, soy sauce, and oil. Add to skillet with water chestnuts and broccoli.
  3. Cook, stirring occasionally until sauce is thickened and broccoli is tender. Serve over rice.

  • 1 (8.8-oz) pouch microwavable jasmine rice
  • ½ (24-oz) pkg frozen egg rolls

Side Dish Instructions

  1. Heat rice according to package directions; season with salt and pepper to taste.
