Seared Salmon with Citrus-Walnut Slaw
Ingredients
- 3 (6-oz) wild-caught salmon fillets
- 1 Tbsp olive oil
- ½ (16-oz) pkg tricolor coleslaw
- 1 blood orange, peeled and sectioned
- 2 tangerines, peeled and sectioned
- ¼ cup refrigerated Champagne vinaigrette (such as Marzetti)
- 2 Tbsp chopped fresh parsley
- 2 Tbsp chopped walnuts
Instructions
- Sprinkle fish lightly with salt and pepper. Cook fish, in batches, in hot oil over medium-high heat 4 to 6 minutes per side or until fish flakes with a fork.
- Meanwhile, combine slaw, orange, tangerines, vinaigrette, and parsley. Season with salt and pepper to taste. Sprinkle with nuts. Serve fish with slaw.
