Seared Salmon with Citrus-Walnut Slaw

Ingredients

  • 3 (6-oz) wild-caught salmon fillets
  • 1 Tbsp olive oil
  • ½ (16-oz) pkg tricolor coleslaw
  • 1 blood orange, peeled and sectioned
  • 2 tangerines, peeled and sectioned
  • ¼ cup refrigerated Champagne vinaigrette (such as Marzetti)
  • 2 Tbsp chopped fresh parsley
  • 2 Tbsp chopped walnuts

Instructions

  1. Sprinkle fish lightly with salt and pepper. Cook fish, in batches, in hot oil over medium-high heat 4 to 6 minutes per side or until fish flakes with a fork.
  2. Meanwhile, combine slaw, orange, tangerines, vinaigrette, and parsley. Season with salt and pepper to taste. Sprinkle with nuts. Serve fish with slaw.
