Cilantro-Lime Pork Curry

Ingredients
- 3 (1-inch-thick) boneless pork chops
- 1 Tbsp olive oil
- ½ (14.5-oz) can fire-roasted diced tomatoes with garlic
- ½ cup unsweetened coconut milk
- 1 Tbsp mild curry paste
- 2 Tbsp chopped fresh cilantro
- ½ tsp fresh lime juice
Instructions
- Sprinkle pork lightly with salt and pepper. Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
- Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
- Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done. Sprinkle with cilantro and lime juice.

- 1 (12-oz) pkg frozen riced cauliflower and broccoli (such as Green Giant)
- 1 Tbsp olive oil
Side Dish Instructions
- Cook cauliflower rice according to package directions. Stir in oil; season with salt and pepper to taste.
