Cilantro-Lime Pork Curry

Ingredients

  • 3 (1-inch-thick) boneless pork chops
  • 1 Tbsp olive oil
  • ½ (14.5-oz) can fire-roasted diced tomatoes with garlic
  • ½ cup unsweetened coconut milk
  • 1 Tbsp mild curry paste
  • 2 Tbsp chopped fresh cilantro
  • ½ tsp fresh lime juice

Instructions

  1. Sprinkle pork lightly with salt and pepper. Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
  2. Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
  3. Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done. Sprinkle with cilantro and lime juice.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen riced cauliflower and broccoli (such as Green Giant)
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir in oil; season with salt and pepper to taste.
